What’s for Dinner: Glazed Carrots

Glazed Carrots

My mom gets the pork burgers for us from a butcher near her town in Indiana. I think these must be a regional food. I’ve never seen them around here in Michigan. We cook them and eat them on buns just like a hamburger. They’re especially good on the grill. Hash browns are an alternative to French fries. Glazed carrots are one of the few veggies my son eats with out complaining. I wonder why? Maybe because they’re smothered in sugar and butter.

Glazed Carrot Recipe

1 small bag of peeled baby carrots

5 TBS of butter

1/2 Cup of brown sugar

Boil carrots until fork tender. About half an hour. Drain and set aside. Melt together butter and brown sugar. Add the carrots and simmer over low heat 15 minutes or until well-coated. This is another dish that tastes even better after a night in the fridge.

I love glazed carrots! I like to add a little roasted cumin or a few rosemary sprigs. Those ingredients add depth to the sweetness of glazed carrots. And, of course a little grated fresh ginger and chopped fresh coriander adds another dimension entirely.
