Cookie of the Week: Cricket Cookies

I’m always on the look out for new recipes to try. I get bored baking with the same old ingredients. When I came across this I just had to try  it. Chocolate chip cookies with a little extra protein? Sounded good to me. I was difficult to find crickets around here this time of year, but I finally tracked some down at a local bait shop.

Cricket Cookie Recipe

Ingredients:
2 1/4 cup flour
1 tsp. baking soda
1 tsp. salt
1 cup butter, softened
3/4 cup sugar
3/4 cup brown sugar
1 tsp. vanilla
2 eggs
1 12-ounce chocolate chips
1 cup chopped nuts
1/2 cup dry-roasted crickets

Directions:
Preheat oven to 375. In small bowl, combine flour, baking soda and salt; set aside. In large bowl, combine butter, sugar, brown sugar and vanilla; beat until creamy. Beat in eggs. Gradually add flour mixture and insects, mix well. Stir in chocolate chips. Drop by rounded measuring teaspoonfuls onto ungreased cookie sheet. Bake for 8-10 minutes.

I had to figure out how to dry roast my live crickets. I found a recipe for that at NYWorms. It was pretty simple. You put them in the fridge for a bit to slow down their metabolism so that they lay still on the baking sheet. Then you put the critters in a 200 degree oven for about an hour or until completely dry. Test by crushing one of the baked insects with your fingers. A well-done cricket crumbles easily.
