Summer Chillers: Pink Pomegranate Lemonade

Well, I couldn’t resist trying this after I saw the name. If you read my other posts you know I’m a sucker for anything pink. I also have an affinity for the exotic and romantic pomegranate. Sweet, tangy and refreshing, this is a great beverage to serve to guests on a warm summer’s night. We don’t drink alcohol, and it’s difficult to find fancy summer beverages that don’t contain it. This is a nice alternative.

Pink Pomegranate Lemonade Recipe

1 cup of sugar

6 cups of water

1 cup of Lemon Juice (5 to 7 lemons if use fresh squeeze your own.)

1 cup of Pomegranate Juice

In a pitcher, stir sugar into water until dissolved. Stir in lemon and pomegranate juice. Chill one hour in the fridge or add ice cubes.

From Scholastic Parent & Child Magazine

I squeezed my own lemons, and it still only took about 10 minutes to make this. Buy bottled lemon juice, and you’ll be done in two. I had to hunt down the pomegranate juice in the grocery store. It was in the fresh fruit aisle instead of with the other refrigerated fruit juices. You can also use cranberry juice instead of pomegranate. If you’re worried about too much sugar, try using Splenda.
